Homemade Vangibath powder will make you feel very light and fresh. As it can be easily prepared and stored, you can always prefer this instead of using readymade ones. Good for health as well. Because HEALTH is WEALTH :-)

INGREDIENTS:
2 tsp urad dal
2 tsp channa dal
2 inch cinnamon
2 dried kapok buds/Moggu
12 to 15 dried red chili
1 tsp oil
1/4 cup dried coconut sliced

PROCEDURE:
  • Be ready will all ingredients which needs to be fried. So that you won't over roast as we will be roasting ingredients separately.

  • Heat a small pan. Dry fry urad dal and channa dal till it turns to golden brown and keep aside.

  • Now heat oil in same pan and fry cinnamon and kapok buds. Keep aside

  • Then add red chilies to same pan with the oil left and keep side.

  • Let it cool.

  • Once it is cooled then add all the fried ingredients and dried coconut to mixer jar.

  • Powder finely using a mixer grinder.

  • This powder can be stored for 10 to 15 days. Homemade vangibath powder will gives you very nice aroma and taste. Vangibath recipe will be coming soon :-)
Yummy and spicy vegetable fried rice!! Enjoy this yum fried rice for lunch or dinner or even in parties/get together. 

INGREDIENTS:
1 big onion
6 to 8 french beans
1 medium sized carrot
1 potato
2 to 3 banana peppers/bajji mirchi ( instead you can use bell peppers)
1 cup rice
1 tbsp green chili paste
1/4 tsp gingergarlic paste
1 tbsp chili tomato sauce (optional)
1/2 tsp soy sauce
1/2 tsp chili powder
1/2 tsp garam masala
1 cup rice
1 tbsp oil
salt as required
coriander leaves for garnishing

PROCEDURE:
  • Chop onions, carrot, beans, potato finely. Chop banana peppers into cubes.

  • Meanwhile cook the rice and keep aside.

  • Heat a large pan, add chili paste and ginger garlic paste. Saute for couple of minutes.

  • Add chopped onions and saute till become soft.

  • Now add all veggies and fry till it's cooked.

  • Now add chopped banana peppers to it and saute for few more minutes. Instead of banana pepper you can use bell pepper. I would recommend banana pepper for spice lovers.

  • Then add sauces, spices and salt. Mix well.


  • Finally add cooked rice to the veg mixture.

  • Mix well and saute for 1 or 2 mins.

  • Garnish with coriander leaves. Serve yum fried rice with tomato ketchup.

Yummy nippattu masala!! Very easy and simple recipe but tastes scrumptious for evening snacks.

INGREDIENTS:
2 Nippattu (you can use homemade or readymade)
1 medium size onion
1 carrot
1 tsp green chili paste
2 tbsp tamarind chutney
1/2 cup sev or bombay mixture
1/2 tsp chili powder
1/2 tsp cumin powder
salt as required

PROCEDURE:
  • Chop onions finely, grate carrot and keep it aside.

  • Place a nippatu on flat surface. Spread chili paste on top of it as per your spice level.

  • Now spread tamarind chutney on it.

  • Sprinkle some finely chopped onions and grated carrot.

  • Now add some sev or mixture on top of it. And then sprinkle chili powder, cumin powder and salt. Yummy Nippatu Masala is ready to serve!! Serve immediately!!

I used and would recommend Maiya's products - Nippatu and mixture which tasted yummy as always.


Yummy paneer frankie!!
It is street food originated in North India. As always street foods are the best.
I would like to include frankie into my breakfast or brunch recipes especially on lazy weekend mornings :-) I will share different varieties of stuffing soon. 

INGREDIENTS:
6 chapatis
2 small bell peppers (can use any color)
1 small onion
1 small carrot
1 small cucumber chopped
1 cup paneer
1 tbsp chili powder
1/2 tbsp red chili sauce
1/2 tbsp tomato ketchup
1/2 tsp soya sauce
2 tbsp olive oil
1 tsp green chili paste
1/8 tsp mustard seeds
1/4 tsp cumin seeds
salt as required

PROCEDURE:
  • Chop onions, bell peppers lengthwise and carrot grated.

  • Crumble the paneer and keep aside.

  • Heat oil in a pan, add mustard and cumin seeds. Then add green chili paste and mix well.

  • Add onion and grated carrot and saute till they start to shrink.

  • Add bell peppers and saute for 5 mins. Make sure you don't over cook bell peppers.

  • Now add crumbled paneer and chili powder, sauces, ketchup and salt.

  • Mix well and saute for 6 to 7 mins.

  • Now turn off the stove and transfer it into bowl. Keep aside.
  • Place a chapati on flat surface. You can use freshly made chapatis or leftover ones. Heat chapatis if you are using leftovers. I recommend fresh ones.

  • Place chopped cucumber on edge of chapati.

  • Then spread 2 tbsp of paneer mixture on it.

  • Roll chapati tightly & carefully to make a frankie.


  • Serve immediately.

This is one of my personal favorites. I am posting this recipe because one of my colleagues loved this and requested for recipe.  Many people do not know about this recipe, you can try this in parties or when you have guests. Trust me they will love this!! :-)

INGREDIENTS:
1 cup ridge gourd skin
2 tsp oil
4 green chilies
1/8 tsp mustard seeds
salt as required

PROCEDURE:
  • Wash and clean ridge gourd and peel the skin of it.

  • For skin chutney you need skin of ridge gourd and 4 chilies ready.

  • Now heat 1 tsp oil in a small pan. Add green chilies and saute.

  • Fry chilies till it turns golden brown.

  • Now add skin of ridge gourd and saute for 5 to 6 mins.

  • Keep aside and let it cool.
  • Add sauteed mixture and salt to mixer.

  • Grind coarsely without adding water. Adjust salt according to taste.

  • In the same pan, heat remaining oil and add mustard seeds. When it splutters add mixture and saute for 3 minutes.

  • Serve with hot white rice, it tastes yummy.


You can try ridgegourd onion recipe with ridge gourd, it's easy and quick to prepare.
