INGREDIENTS:
1 cup ridge gourd skin
2 tsp oil
4 green chilies
1/8 tsp mustard seeds
salt as required

- Wash and clean ridge gourd and peel the skin of it.
- For skin chutney you need skin of ridge gourd and 4 chilies ready.
- Now heat 1 tsp oil in a small pan. Add green chilies and saute.
- Fry chilies till it turns golden brown.
- Now add skin of ridge gourd and saute for 5 to 6 mins.
- Keep aside and let it cool.
- Add sauteed mixture and salt to mixer.
- Grind coarsely without adding water. Adjust salt according to taste.
- In the same pan, heat remaining oil and add mustard seeds. When it splutters add mixture and saute for 3 minutes.
- Serve with hot white rice, it tastes yummy.
