This is one of my personal favorites. I am posting this recipe because one of my colleagues loved this and requested for recipe.  Many people do not know about this recipe, you can try this in parties or when you have guests. Trust me they will love this!! :-)

INGREDIENTS:
1 cup ridge gourd skin
2 tsp oil
4 green chilies
1/8 tsp mustard seeds
salt as required

PROCEDURE:
  • Wash and clean ridge gourd and peel the skin of it.

  • For skin chutney you need skin of ridge gourd and 4 chilies ready.

  • Now heat 1 tsp oil in a small pan. Add green chilies and saute.

  • Fry chilies till it turns golden brown.

  • Now add skin of ridge gourd and saute for 5 to 6 mins.

  • Keep aside and let it cool.
  • Add sauteed mixture and salt to mixer.

  • Grind coarsely without adding water. Adjust salt according to taste.

  • In the same pan, heat remaining oil and add mustard seeds. When it splutters add mixture and saute for 3 minutes.

  • Serve with hot white rice, it tastes yummy.


You can try ridgegourd onion recipe with ridge gourd, it's easy and quick to prepare.
Quick and easy ridge gourd recipe. It can be served with rice or chapathi, it goes well with both. You can also take this for your lunch box, it tastes great!

INGREDIENTS:

1 big ridge gourd
2 medium sized onions
2 tbsp oil
1 tsp greem chili paste
1 tsp chili powder
a pinch of turmeric powder
1/2 tsp garam masala
pinch of mustard seeds
salt as required

PROCEDURE:
  • Wash and clean ridge gourd. Peel the skin of ridge gourd. Do not throw the skin, you can try ridge gourd chutney with it.

  • Chop ridge gourd and onions into cubes.



  • Heat oil in pan. Add mustard seeds, when it splutters add onions. And saute for 5 mins.


  • Now add chopped ridge gourd.

  • Mix well and close the lid. Let it cook for 10 mins.

  • Remove lid, mix once again and add turmeric, chili paste, chili powder, garam masala, salt.

  • Mix well and saute for 2 more mins.
  • Serve with rice or chapati or roti.

Dahi Toast is one other popular chats in my hometown Hindupur. Its very easy to prepare also, it doesn't take much time.

INGREDIENTS:
1 sandwich toast
1/2 tsp chat masala
1/2 tsp chili powder
1/4 tsp salt
1/2 tsp jeera powder
1/2 cup fresh curd/dahi

PROCEDURE:
  • Place sliced sandwich toast in the plate.


  • Spread dahi on top of it
  • Sprinkle two pinches of chat masala, chili powder, salt, jeera powder. Yummy Dahi toast is ready to serve :-)


You can also sprinkle some sev or boondi while serving.
Mouth-watering Sandwich toast. It's one of the popular chats in my hometown Hindupur. You can also have like a sandwich without toasting it. 
INGREDIENTS:
2 medium size onions
1 Big tomato
1 small capsicum
1/2 cup coriander chutney
1 tsp chat masala
1 tsp salt
1 tsp chili powder
4 tbsp butter
4 slices of bread

PROCEDURE:
  • Chop onions and tomatoes into slices. Chop capsicum lengthwise.

  • Place bread slices on flat surface and spread coriander chutney on each one.

  • Place veggies on two slices of bread and sprinkle a pinch or two of chat masala, salt and chili powder.

  • Cover with remaining slices which we have spread chutney.

  • Heat a skillet or pan. You can apply butter on sandwich or melt butter on hot skillet. Place sandwich on skillet and toast both the sides of sandwich.

  • Serve yummy sandwich toast hot. You can serve with tomato ketchup or coriander chutney .

Biryani Masala

INGREDIENTS:
3 bay leaves
1/4 tsp black pepper
1 tbs coriander seeds
1 tbs jeera seeds
2 inch cinnamon stick
3 cloves
2 Dried kapok buds

PROCEDURE:
  • Dry roast all ingredients for biryani masala till it gives nice aroma.


  • Let it cool. Then powder all spices using a mixer.




Cilantro/Coriander chutney is yummiest in chats. It can be used in any chat such as harabhara kabab/samosa/dhahi bread toast etc.

INGREDIENTS:
1 cup coriander
3 green chilies
3 tbsp curd
salt as required

PROCEDURE:
  • Wash and drain coriander leaves, green chilies.

  • Add coriander, green chilies, 1 tbsp curd and salt to mixer. Grind it smooth.

  • Taste it. Add salt if required. Then add remaining curd and grind it.
  • Serve Coriander chutney with hara bhara kabab or cutlet or samosa or any other chat.



An Authentic Baby Aloo Dum Biryani!! You will definetly gonna love it. Trust me :)

INGREDIENTS:
For Curd Mixture
1 cup curd
1 tsp chilli powder
1/2 tsp turmeric powder
1 tbsp biryani masala
1/2 tsp salt

For Aloo Masala
10 to 15 baby potatoes washed and peeled
2 tbsp oil
1 tsp chilli powder
1/2 tsp turmeric powder

For biryani
4 tbsp Oil
3 bay leaves
1 inch cinnamon
1/2 ginger garlic paste
6 green chilies
1/4 tsp mustard seeds
1/4 tsp jeera
3 Dried Kapok buds
1 onion (lengthwise chopped)
1 Cup Basmati rice (soaked)
salt as required

PROCEDURE:


  • Add chili powder, turmeric powder, biryani masala, salt to curd.


  • Mix well and keep aside.


  • Heat 2 tbsp oil in pressure cooker or kadai pan. Add chili powder and turmeric powder.


  • Then add peeled potatoes and mix well.


  • Fry for 5 mins and transfer this to bowl.


  • Heat 1 tbsp oil in same pan and add onions. Fry till it turn into golden brown. Keep it aside.


  • In a same pan, heat oil and add mustard seeds. When it start popping out add ginger garlic paste, chilies, bay leaves, buds, jeera,cloves. 


  • Stril well. Add curd mixture and saute for 30 secs.


  • Then fried baby potatoes. Saute for 1 min.


  • Add fried onions and mix well.


  • Add soaked rice to it and add 4 cups of water. And add salt as required.



  • Pressure cook till 4 whistles and serve hot with raitha.
